Food and Beverage Manager

Overview:

Food and Beverage is responsible for coordinating all food and beverage related functions as well as ensuring exceptional guest service. These can be the restaurants, steak house, bar, poolside service, room service, and events/caterings. They help facilitate banquets and functions as well as ensure all operations run smoothly with the FOH and BOH staff. They implement training programs for servers, host, bussers, cooks, chefs, dishwashers, and any other position involved with food or beverage. They manage a team to ensure all FOH and BOH operations are smooth and coordinate management to ensure we are always covered. They work with the Kitchen to create specialty menus, items, and stay up to date on all cost. Along with this, they work with the GM to set goals for labor and food cost controls. They ensure all pars are set, met, and adjusted as needed and work with vendors to ensure we are getting the best products at the best prices.

Significance:

The F&B Manager sets the tone for the entire restaurant and bar staff. They hire, train, coach and direct the team. Communicate with guest and set the standard of food and service quality. They work closely with the management team and the GM to ensure all goals are known, achieved, fix any shortcomings, and create an atmosphere that guests and staff thoroughly enjoy.

Responsibilities, Duties & Expectations:

  • Being proactive! Look for opportunities to help others, anticipate guest needs don’t wait to be asked. Never walk by something that needs attention whether it is a piece of trash on the floor or something more substantial like malfunctioning equipment. Either address the issue yourself or bring it to the attention of someone who can.
  • Being aware of and positively impacting guest perception
  • Acting with respect and professionalism toward both guests and coworkers
  • Control cost and expenses and promote profitability
  • Maintaining a clean, organized, and sanitary workspace
  • Completing opening/closing duties
  • Completing daily deep clean duties
  • Being able to lift up to 50 pounds
  • Maintain complete knowledge of and comply with all company policies, procedures, and standards as well as TABC
  • Be familiar with hotel services and features
  • Inspect all aspects of food and beverage areas to ensure compliance with standards of cleanliness
  • Ordering and inventory of product
  • Resolve guest complaints
  • Ensuring all staff is up to code in attire, grooming, and cleanliness
  • Creating schedules for staff and ensuring staff report to work as scheduled. Documentation of late or absent employees is also required
  • Actively participate a weekly management meeting
  • Meet weekly with the GM to keep everyone updated
  • Set and maintain par list
  • Resolve any issues between management and departments
  • Analyze reports and find shortcomings as well as achievements
  • Coordinate staff on all events, promos and special
  • Ensure all invoices are properly documented
  • Ensure we are properly staffed ever day accounting for all holidays and special events
  • Whatever is needed, whenever needed

Qualifications:

  • 4+ year Collegiate degree preferred
  • 4+ years of experience
  • Ability to learn the following systems/programs
  • Point of Sale (POS)
  • Property Management System (PMS)
  • Daily Revenue System (DRS)
  • Payroll
  • Company issued internet/email
  • Write routine reports, correspondence, business letters, summaries, and reports using prescribed formats, and conforming to all rules of punctuation, grammar, diction, and style.
  • Conflict resolution training
  • Speak English, other languages preferred
  • Reading and writing abilities that are used when completing paperwork
  • Understand a P&L and cost controls
  • Flexible availability such as working nights, weekends, and/or holidays
  • Well-developed interpersonal skills
  • Proficient in Word, Excel, and PowerPoint
  • Ability to read and interpret documents
  • Ability to create specialty drinks and food specials
  • Ability to travel to seminars, conventions, etc.…
