Restaurant Assistant General Manager

Dough Pizzeria Napoletana

This is a Contract position in San Antonio, TX posted August 22, 2022.

SUMMARY OF POSITION:

The Assistant General Manager (AGM) works with the GM/Chef in leading all operational aspects of Dough Pizzeria Napoletana (Dough). The AGM will deliver a high-quality menu and motivate staff to provide excellent customer service. AGM will ensure efficient restaurant operations, as well as maintain high production, quality, productivity and guest service standards. To be successful in this role, you will need working experience in both the front/back of the house. FOH: overseeing the entire dining room, customer interaction, assisting servers, bussers, balancing seating capacity, hiring qualified FOH staff, training and scheduling-to name a few areas of responsibility. BOH: a few areas of responsibility include hiring cooks, dishwashers, overseeing prep, scheduling and adhering to health and safety restaurant regulations. The AGM is expected to lead by example and uplift staff during busy times in this fast-paced restaurant. Ultimately, AGM will help raise the bar and ensure that Dough runs smoothly, and guests have pleasant dining experiences.

SKILLS:

At least five years of experience working as a Restaurant Manager/AGM in a full-service restaurant (not fast-food)

Guest relations skills-you must be comfortable going table to table talking with guests and understanding how to read each table

Wine/beer knowledge-experience opening bottles of wine/proper wine service

Strong leadership, motivational and people skills

Experience working with social media: Instagram, Facebook, etc.

Excellent basic math skills and the ability to operate a POS system

Proficient in all Microsoft applications

Excellent communication skills-both oral and written

At least two years of hospitality education

Ability to carry plates, glassware, silverware, etc.

Ability to reach/bend/stoop and lift as much as 50 lbs.

Ability to walk/stand for long periods of time (up to 12 hours)

Stamina to work 50-60 hours per week

Ability to recall ingredients and menu items to inform guests and staff

RESPONSIBILITIES:

Coordinate daily front and back of house restaurant operations

Understand all of Dough s policies, procedures, standards, specifications, guidelines, training programs and branding

Ensure that all guests feel welcome and are given responsive, friendly and courteous service

Hiring, training, developing and scheduling of staff

Oversee and ensure that Dough s policies on employee performance appraisals are followed and completed on a timely basis

Floor supervision & expediting by assisting FOH/BOH staff/managers with all tasks: bussing, food running, serving, prepping, expediting, etc.

Fill in where/when needed to ensure guest service standards and efficient operations

Read guest reviews and assist in efficiently and accurately responding to reviews

Making the restaurant a better place by suggesting/making needed changes/improvements

Ensure proper cash handling/financial reconciliation

Working with the Chef, regularly review product quality/pricing and research new vendors

Ensure that equipment is kept clean and in excellent working condition through personal inspection and by following Dough s preventive maintenance program

Organize/supervise shifts-scheduling labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met

Be knowledgeable of Dough s policies regarding personnel and administer prompt, fair and consistent corrective action for any violations of company policies, rules and procedures

Provide advice, suggestions and feedback to GM/Chef/Owners

Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner

Make employment and termination decisions consistent with GM and Owner s guidelines for review and approval

Keeping labor/other costs in line with budget and identify ways to cut costs/waste and improve bottom line

Budgeting/inventory of wine, beer, non-alcoholic beverages & front and back of the house supplies

Ensure compliance with health and safety regulation

Work with the Chef to ensure that all food and products are prepared with consistency and served according to Dough s recipes, portioning, cooking and serving standards

Recommend and execute ways to reach a broader audience through social media & other forms of marketing: improving our current advertising and marketing efforts

Working with the Chef/GM to create exciting daily features/wine & beer dinners and other restaurant events

Create detailed reports on weekly, monthly, annual revenues and expenses

Creating, developing and training of wine/beer lists

Ensure that all products are received in correct unit count and condition and deliveries are performed in accordance with Dough s receiving policies and procedures
